When you think of gelato Messina is perhaps the first thing that comes to mind. However, Messina's Creative Department is something a little unfamiliar to many people. This is not scoops of Messina gelato on a plate. Rather it's a gelato degustation bringing an unusual dinning experience that's never seen before. It's a sweet journey using bold flavours and creative combinations that challenge your taste buds.


The degustation includes 7 dessert courses with (non-alcoholic) drinks pairing. With only one table in the room, the atmosphere does get a little intimate, but at the same time this allows a more genuine interaction with the chefs. 




While the dishes are being prepared diners are welcome to have a tour in the kitchen and watch how each dish is made. 


When the dishes are presented, the chef patiently tells a brief story about each dish.

Beetroot & Purple Shiso Granita
This was surely an impressive way to start the night. I mean how cool is it to have a bowl carved out of ice! When we heard how the chefs did it we began to have more appreciation for the effort that goes into creating each dish. 

A water balloon is frozen overnight and then shaped with a blowtorch before being dipped in liquid nitrogen. The beetroot powder melts as it hits the moisture in your mouth to form a granita. The shiso cuts through and helps tie in the olive oil and vinegar. This was a powerful appetiser masterfully employing bitter, savoury, sour and sweet flavours in one dish. 


Olive Oil & Sansho Pepper Sorbet; Apple Sparkling
The subtly peppery sweetness of the sorbet was highlighted by the contrasting bitter sweet tamarillo and the sour tomato jelly to leave a fruity impression. The drink pairing was a spiced sparkling apple juice, which tastes somewhat similar to apple cider vinegar. 


Rhubarb Umeshu Sorbet; Kumquat Kombucha
The sorbet sat on a bed of savoury ricotta mousse, which paired well with the sweetness of the rhubarb. This tasted almost like a very gourmet version of rhubarb yoghurt. Kumquat kombucha was the drink pairing. Mr Piggy is a fan of homemade kombuchas, and this was one to remember. It had a distinctive bushy fragrance, a hint of pickled chilly water, and a faint Kumquat smell.


Horseradish & Dill Oil Sherbet
You can taste a hint of horseradish in the sherbet. Together with the crunchy shaved asparagus, tossed in Kombu butter, this was an earthy dish.

Kiwi & Chili
Adding to the theatre, we were instructed by the chef to brush a dab of herb oil on the glass. The kiwi juice tasted very smooth initially and was followed by a nice kick of chili.


Smoked Koji Gelato; Seedlip Spice 94
To say this is a complex dish would be a gross understatement. Kudos to the chefs for coming up with a recipe involving so many elements that combine together so aesthetically pleasing - the dish resembles a bird's nest - and so full of umami. 


The smoked koji gelato was complemented by a 63c yolk, semi-dried enoki mushroom, pickled shiitake cubes, sherry PX, and shiitake and black tea broth. The koji, fermented rice typically used in the fermentation process of sake, miso and soy sauce, gave it a nice savouriness. A gooey icy salted yolk is perhaps to best way to describe the flavour of the dish.


Bagna Cauda & Cured Egg Yolk Gelato; 4 Years Aged Plum
The only savoury dish of the night. Whilst we knew what we were getting ourselves into, this was certainly a much welcome intermission from the sweetness of the prior dishes. The foie gras ravioli had an al dente skin, and explodes in the mouth oozing warm runny foie gras. 


I know what you must be thinking... is that a boiled egg at the back? No, that is the Bagna cauda gelato. Bagna cauda is an Italian dip featuring garlic and anchovies. The garlic and anchovies really come through in this gelato, an interesting idea to round out the Italian inspired dish.


Dulce De Leche Gelato
OK, is this a joke? Did they just put a passion fruit on the plate? We've been to several dessert places where they try to mimic fruits, but Messina smashed it out of the park with this one! Whilst we were disappointed not to get the Instaworthy Porcini or Strawberry, we are glad to get this one as the finale.


We thought it was a chocolate shell, but actually it was an extremely thin black sugar shell, which gave it a distinct caramelised bitter sweetness. This paired well with the dulce de leche gelato, yoghurt and licorice mousse and passion fruit reduction. 


DIY Mocktail
Something to get our hands dirty and sticky sweet. This was our favourite drink of the night, featuring honey comb, coconut, lemon and verjus. Who would have thought such a combination would be winning? Give it a little shake and this turned out to be a velvety full-bodied fruity concoction. 


Petit Fours - Okonomiyaki
A tiny savoury bite of potato to restore some sanity!

This was certainly a once in a lifetime experience... or perhaps twice? We may be back! Putting up a 7 course dessert degustation is no easy job for the chefs (...or the diners). It was a job well done, the 7 dishes all featured different elements and different themes, and were enjoyable as standalone desserts. The chefs here made mission impossible possible!

Enjoying such a degustation comes at a high price, and we don't mean the damage to your wallet ($130) but more your tummy. Having 7 desserts in a row (and 6 mocktails) does take a toll on the tummy, and gives you a savoury craving afterwards.

Following Ester's successful opening in 2013, the team behind it has now opened a sister restaurant Poly. Having dined at Ester before, Mr Piggy and I could not wait to check out what Poly has to offer. The menu is concise and the place aims to deliver food in a casual "hands-on" manner. The dishes are small in portion, and this gave us a good chance to sample a variety.

Popped Buckwheat, Fennel Salt (complementary)
A house-made "popcorn" was given to start us off. Unlike normal popcorn, this one is made with buckwheat seasoned with fennel salt. Almost like eating normal popcorn, this popwheat had a similar texture only nuttier.

Comte Donut $15
This must be the best donut we have ever had! Sweet donuts are usually not my thing, I often find them so sweet that my teeth are about to fall out. When I saw this savoury donut on the menu, there was no way I was going to skip it. It was sooo good - we never thought a donut could be so delicate. Unbelievably crumbly, after taking a bite out of it, the whole thing starts crumbling down inside our mouths. The Comté cheese was blended into the dough giving it a touch of savouriness and the sprinkle of spices added a smoky touch. 


Scarlet Prawns, Salted Egg Sauce $22
The prawns were sweet and tender, it was an interest pair with the salted yolk sauce, which drew out and enhanced the natural sweetness of the prawns.

Pork Pastrami & Lardo Toast $15
In simple words this was a toast with a big fat slice of lardo on top, we couldn't find the pork pastrami. For some reason I actually quite liked it even though I usually prefer my meat lean. The radicchio added a nice bitter savoury contrast and helped to cut through the greasiness. Mr Piggy didn't enjoy the fattiness as much.

Enoki, Pancetta $12
A simple dish, which was all about the natural sweetness in the enoki, where by cooking it in pancetta oil it added a nice savoury contrast and more depth in the flavour.

Octupus, Chilli Oil $24
The octopus was fresh and perfectly cooked, with beautiful charred edges and the inside remaining juicy and tender. The creamy potato foam was a good match to absorb all the flavour.

Sausage Sandwich $15
This is what sausage rolls should be all about! Buttery brioche bun, sweet onions and hot mustard together with spicy chorizo, what more can you ask for? The chorizo was charred to perfection, as u bite through the crispy skin the sausage bursts and fills your mouth with aromatic chorizo oil.

Sweet & Sour Ribs, Crackling $28
This was when we got really hands-on with these sticky 
ribs. The meat was tender and you could really smell a nice dose
of vinegar in there. The airy crackling was a good touch to top it off.

Snowpea, Anchovy, Kombu, Pecorino $15
The waitress insisted we should get some greens...okay just to be healthy! Raw snowpeas with vinegrette dressing and shaved pecorino. What a pleasant combination - the salad was light and refreshing.

Lemon Vanilla Soda $7
For drinks we got the lemon soda. You could really taste the lemon flavour, and it wasn’t overly acidic = win 😋. The vanilla gave it a smooth and creamy finish (you can also see the vanilla seeds too).

Overall, we liked how most dishes were fun and creative and most importantly had the flavours spot on. Looking forward for our next visit.

With a twist to the European deli/restaurant idea, Calia brings to Melbourne diners an affordable Michelin-starred-chef-designed menu featuring Asian inspired dishes, artisanal desserts, and gourmet goods. Almost 18 months after its opening, the place is still jam-packed with people. Does it live up to the hype? The piggies are here to do some digging!

The shop half is almost as big as the restaurant with produce sourced from local Australian suppliers as well as some imported goods that may be hard to find elsewhere. 

                        
Cake Cabinet (from Bibelot)


Crispy Roast Pork Bowl $17.9
This bowl tantalised our piggy snouts with its amazing visual presentation. The dewy 63°C egg was incredibly runny, coating the rice in sticky, gooey egg yolk. However, the pork itself was disappointing. The crackling wasn't crunchy at all, but rather tough and chewy. The meat was lukewarm, dry, and didn't have much flavour. 

The King $18.2
Don't be deceived by the looks - these aren't "King" worms crawling over rocks. The Alaskan King crab legs were topped with a generous amount of sweet miso mayonnaise and then torched - a simple and delicious dish.

Salted Egg Yolk Chicken $11.9
Calia's take on Taiwanese Fried Chicken cleverly featured the use of salted duck egg yolk, another traditional Chinese ingredient. The chicken was a bit overcooked, but no matter, the egg yolk carried the dish.

The Marbled Sukiyaki Bowl $16.9
The tender beef was flavoured well with the sweet and gingery sukiyaki sauce and the runny egg. However, the quality of the beef was average, and there was a slight gamey taste. 


Matcha Latte $5.5
The matcha latte was almost too cute to drink... and that's fine, we ordered it for the latte art an have to say it was money well-spent. The drink only comes sweetened as the matcha is premixed into a syrup. 

Matcha Mia Tiramisu $10.9
As we dug into this dessert our spoon easily glided past the layer of soft matcha cream, sinking into the coffee-drenched lady fingers. It was not overly sweet but a bit dense for tiramsu.

Matcha Lava Cake $15.9
We completed our 3-course matcha experience with the signature lava cake. Hot and cold; matcha and chocolate; smooth and crumbly - this dessert was full of contrast, and everything paired well together. The bittersweet rich matcha centre added additional complexity to the already bittersweet chocolate cake. This was our favourite dessert of the day. 

Hojicha
Being tea-lovers we also ordered the Hojicha, which looked absolutely serene and elegant. Unfortunately, the taste didn't live up to the aesthetics. There was a mere whisper of hojicha in the thin brown layer. This dessert should have been better named the Plum, as the sour plum centre dominated the overall flavour and we didn't really know what the hojicha was there for. 

We could definitely see why Calia is a popular destination for friends and families. The environment is modern and casual, and conveniently located in a shopping mall in the heart of Melbourne.  The price is affordable and the menu is extensive. Most of all, the food looks pretty, and certainly instaworthy. Nevertheless, for fellas looking to satisfy the palate as much as the eyes, this may not be the ideal place.
